Taste-Off: The best cold-smoked salmon at Costco and Trader Joe’s — and the ones to avoid

Published Fri, 21 Feb 2025 21:30:11 GMT

Slather a bagel with cream cheese, top it with cold-smoked salmon, capers and a snip of dill, and it’s a lavish breakfast or brunch standout — or memorable snack. That said, the deliciousness of this indulgence is entirely reliant on the star ingredient — that slice of salty, cold-smoked salmon. When it comes to smoked salmon, the uninitiated have lots of questions: How is it made? Why is it so salty? And what is cold smoke anyway?Cold-smoked salmon, the kind that looks almost raw and comes in a range of styles and flavors, isn’t exactly raw fish. It’s cured in salt, then “cold-smoked” at 70 to 85 degrees for several hours, until it absorbs the flavor of the smoking wood and becomes silky and delicate in texture. It’s basically lox, but smoked. The texture and flavor of what’s in each package depends on the amount of salt, the variety of salmon and the types of wood used in the smoking process. In general, Sockeye salmon, native to the Pacific Northwest, is softer, more silky an...

49ers: Brady, Manning endorse McCaffrey’s MVP case

Published Fri, 21 Feb 2025 21:30:11 GMT

SANTA CLARA — Tom Brady says his NFL MVP vote is leaning toward the 49ers’ Christian McCaffrey, who also scored an endorsement Monday night from Peyton Manning.Such backing might be what McCaffrey needs to wrestle the Associated Press’ NFL MVP award away from quarterbacks, who’ve won it 16-of-17 years since Brady captured his first in 2007.Or the 50 voters — from national media outlets — could follow McCaffrey’s own advice, which, after the 49ers’ latest win Sunday in Arizona, was to cast support behind 49ers quarterback Brock Purdy, the unanimous favorite of the Las Vegas sportsbooks. The second-best odds belong to quarterback Lamar Jackson, who leads the Baltimore Ravens (11-3) into Monday night’s game at the 49ers (11-3).McCaffrey, the NFL’s rushing leader and fifth in MVP odds, made the media rounds Monday: He appeared on Brady’s “Let’s Go!” podcast and also on ESPN’s “ManningCast̶...

SAN FRANCISCO (KRON) -- Widespread rain that arrived in the Bay Area Monday has continued into Tuesday, soaking the morning commute and leading to another day of flight delays at SFO. Scattered showers are expected to continue through this evening with additional bands of widespread rain expected Tuesday and Wednesday, according to the National Weather Service. Bay Area rain totals: Storm expected to hit in waves "Keep those umbrellas handy!" advised KRON4 Meteorologist Kyla Grogan. "We have more showers expected through this evening and overnight. Tuesday will be another unsettled day, but our showers will be far less intense. Wednesday I expect another robust round of rain to come our way as the second low pressure system moves in. There is still a bit of uncertainty of the track of the Wednesday system.  If it stays offshore a bit more than projected we will see lower rain totals. But if it moves ashore or very close to the coast, I expect we'll see significant r...

California looks to the health system to sustain mental health funds in schools

Published Fri, 21 Feb 2025 21:30:11 GMT

(BCN) -- To create an education system that has stable funds for mental health, California educators and leaders are turning to the health system and launching a statewide behavioral health initiative to fill funding gaps in fluctuating, sometimes unpredictable school budgets."The health systems and the education systems are not bound together successfully enough to make sure we engage in both prevention and treatment," said David Gordon, a commissioner at the Mental Health Services Oversight and Accountability Commission. "That's particularly true for the most underserved communities." Woman killed on I-580 Richmond bridge identified Funding for mental health in California public schools typically has come from general education budgets, a reason funds have never been stable. As the need for more mental health services and specialists skyrockets, administrators and experts are turning to the health system to better serve needs that existing education budgets just can't cover.
